Coconut Macaroons


Hello Everyone:

It has been a fun several days. My friend Robert and I went on another Perfect Vacation. If you have never tried one, you are missing out. The ultimate beauty of these; they are ALWAYS interesting, fun and PERFECT! What more could you ask for?

I have been creatively playing in the kitchen again and made an easy coconut macaroon last night. You can eat this one as is, frozen or dehydrated. I have dehydrated several overnight and am now going to cover them in raw cacao! This is a very easy recipe and one the children can be involved in too!


Coconut Macaroons
makes about 25

                             2 cups almond meal / pulp from making almond milk
                             1 1/2 TBS chia seeds, ground ( measure, then grind )
                             6 TBS water for chia seeds
                             5 TBS creamed honey, agave or half of each mixed
                             1 cup coconut, shredded
                             1 tsp vanilla powder or extract
                             1/2 tsp coconut flavoring ( optional )
                             2 TBS coconut oil
                             dash salt
In a small bowl place the ground chia seeds, add 6 tablespoons water and mix throughly. Using a larger bowl, add the almond pulp, shredded coconut, salt, vanilla, coconut oil and flavoring, and mix. Then add the thickened chia seeds and honey. Stir until completely combined. Adjust flavor and sweetness. Spoon or scoop onto a dehydrator teflex sheet or parchment paper and form small cookies. Dehydrate at 105 degrees for 6-8 hours.

*** You can split the recipe, add 2 TBS cacao powder plus 1-2 TBS honey or agave and make chocolate coconut macaroons. If you make a full recipe you can substitute cacao butter for the coconut oil and add 4 or 5 TBS cacao powder to create a richer chocolate flavor.
Another variation is to add 1 TBS of maca powder or 2 TBS mesquite powder to either the vanilla or chocolate cookies.

The Perfect Vacation ( even in town )

Hi Everyone:
Isn't it great you don't need to go to Germany to have the "Perfect Vacation"? You can take or live a "perfect vacation" at any moment you choose. Now you are thinking, " What is the Perfect Vacation"?
The "Perfect Vacation" was created many years ago by a friend of mine who used to live in Los Angeles, CA and go on them almost every weekend. You can just experience the vacation or you can set a goal for your vacation, gather clues and piece together the puzzle you create and then clear what ever issue is created by your vacation puzzle. It is lots of fun, relaxing and keeps you living and experiencing in the NOW.
 Here's how it works. Set a length of time, and if you want, a specific area. By specific area I mean to stay in your town versus drive across country or hundreds of miles away. The time limit will also help regulate how far you physically go. Then you pack a small bag with a few essentials, get in the car, or on your bike and take off. The intent is NOT to have any plan, to follow your heart and inner guidance on where to turn, which way to go and where to stop and explore. As you are going observe everything you can and write down the recurring themes or important messages. Check in every once in awhile and see show far along you are to completion, especially if you have set a goal. Once you reach completion sit down and put all the clues you have gathered together. Your puzzle will take shape and show you a theme, sentence, lesson or issue. If it is an issue you wish to clear then do whatever clearing process you know to send it on it's way and out of your life.
This method of taking a vacation is fun, exciting, interesting and very relaxing. You have no agenda, no place to go, no time frame to be anywhere, everything that crosses your path is available for exploration. If you go with others, be sure to set the intent that the vacation will serve ALL on the trip. This type of vacation or living life, is always soul guided and brings you valuable messages from spirit in a fun format everyone can participate in and enjoy. Give it a try!   • notepad & pen / pencil
  • camera
  • flashlight
  • water
  • snacks / food bars
  • change of clothing (to adopt a dressier look, something as simple as adding a tie / scarf or changing a shirt / t-shirt to putting on a different pair of shoes or changing into a universal black dress or skirt.)
  • bandana
  • sunblock
  • toothbrush & toothpase / mouthwash / mints
  • deodorant
  • handywipes / soap
  • small towel (washcloth or synthetic chamois)
  • 1 or 2 plastic bags
  • a larger bag to carry everything
