Energy Breakfast Bars

Raw Vegan Energy Bars

Hello All:

It is a busy week for me. Everyone is so excited about Father Joshua's lectures and healings later this week. We can already feel his expanded heart and love flowing over us all. I am getting ready to go to Costa Rica for the holidays, lots to pack and do before I leave. I am so excited and honored I will be the guest chef at the Farm of Life for this holiday season. I can't wait to have super fresh picked organic food to create with! A chef's dream come true.

In preparing for my trip I am making myself a few raw food travel snacks. This energy bar is a recipe I used to make every week. I use it for a quick meal, snack or as  I did today, a breakfast granola with almond milk. They are easy to make and fun to do with children. Big and little kids love to put their hands in there with all the goo!

Give yourself a head start on the holidays and make these up now, for the days you are short on time and need some energy.

***You can customize the ingredients to your liking, or what is readily available.

Energy Bars
Makes 3 dehydrator trays

4 cups buckwheat, sprouted 1 day
1 cup quinoa, sprouted 1 day
1/2 cup millet, sprouted 1 day
1/2 cup flax seeds, soaked
1/2 cup pumpkin seeds, soaked 1-2 hours
1 cup sunflower seeds, sprouted 1 day
1/2 cup currents or raisins chopped
1/2 cup chia seeds, soaked
1/2 cup dried cherries or other fruit of choice
1 cup hazelnuts, soaked and rough chopped
1 cup unsweetened coconut
2 cups dates, pitted and soaked, then blended into paste
1/2 cup agave, maple syrup or honey
2 TBS cinnamon
1 TBS vanilla powder
1 tsp salt
1/2 tsp nutmeg

Blend the dates, vanilla, salt, nutmeg, agave and either the soak water or some orange juice to a thick paste. In a large bowl mix the rest of the ingredients together. Add the date paste and combine well. On dehydrator sheets with teflex spread the mixture evenly. Score with a knife to create the size bar you like. Dehydrate 12 - 24 hours until dry and crispy. Store in glass containers. 


Almond Milk
makes 4 cups

1 cup raw almonds, soaked overnight (measure, then soak)
4 cups filtered water
1 tsp vanilla powder
1/2 tsp salt
2-3 TBS agave, or other sweetener

Blend the water and nuts until smooth, about 45 seconds. Strain through a fine strainer or nut milk bag. You can also use a paint straining bag ( be sure to wash it before using ). Save the almond meat for cookies or pate. ( you can freeze it until you are ready to use it ). Put the milk back in the blender and add the rest of the ingredients. Blend quickly.
You can use a mix of nuts, what ever is your desire. My favorite nut milk is cashew almond. Play with it until you find your personal favorite. You can freeze the milk in ice cube trays to use in shakes, coffee, smoothies, ice cream or on your cereal.

Cheddar Cheese Nacho Chips


Hi Everyone:

I want to tell everyone that I am going to be working at a retreat center in Costa Rica for a month over the holidays! I am so excited as it will be my first trip there. I will be at Finca de Vida, the Farm of Life, on the southern west coast. I am such a lucky lady to be spending the holidays in a beautiful, warm, lush location, doing what I love!  If you have the inclining, come and visit me and spend your holiday relaxing on the beautiful, lush organic farm of life!
Today I have made some really easy, nutritious and super delicious nachos chips. My 4 legged girl Crystal LOVES these chips. They make a fabulous stand alone snack, great for school lunches or for dipping into guacamole, salsa or other pate. So for those with a dehydrator, here we go.

Cheddar Cheese Nacho Chips:

1 cup cashews, soaked
1 red bell pepper, chopped
4 TBS nutritional yeast
1 TBS lemon juice
1/4 tsp apple cider vinegar
1/4 cup water, more if needed to blend
dash salt
dash cayenne pepper
6 raw nori sheets

Blend until smooth and slightly thick. On a dehydrator sheet lay one raw nori sheet. Take another nori sheet and cut it in half and place it on the dehydrator sheet also. Spread the cheddar cheese on the nori sheets and place in the dehydrator at 115 for 8 hours. When they are finished drying use your kitchen scissors to cut the sheets into the desired shape. These will last 4 weeks in a covered container.

Vascular Age Testing

Mango Tart Recipe

Hello all you wonderful Raw Foodies:

Here we are at the beginning of Fall again. I just finished a great Blessed Herbs colon cleanse and am starting the whole body cleanse. If you would like to cleanse and have never experienced a Blessed Herbs cleanse, I highly suggest you try one. They are the bomb!! I have been using and recommending the cleanses since 1999, and have had only positive results. They do a fabulous job and meet you at the level of cleanse you are ready for. That is their beauty. Everyone LOVES these cleanses and the results are awesome!
I just made this Mango Tart for the couple that owns Finca de Vida, a retreat and farm in Costa Rica, and I thought would share the recipe with you. You can work with it and make it into a tropical tart if you like, just add more coconut oil, banana, papaya, pineapple, or other tropical fruit of your choice. Be creative with it and enjoy!!

Mango Tart
Makes 10 -12 slices

Filling:
3/4 cup cashews, soaked
1/2 cup coconut meat
1/2 cup irish moss gel
1 TBS evaporated cane sugar, powdered or other sweetener of choice
3 TBS lime juice
2 1/2 cups ripe mango, chunked
3 soaked dates
2 TBS coconut oil
dash salt
1 ripe mango, sliced thin
coconut water for blending if needed
** For an 11" pan you will need at least 3 cups filling

Crust:
1 1/2 cup almonds, soaked and dehydrated
1 cup pecans
1/2 cup walnuts
10-12 medjool dates, pits removed
1/4 tsp vanilla powder
1 TBS coconut palm sugar
dash salt

Crust:
Process in food processor, until the sound changes and you have a crumble mixture that sticks together when you press it between your thumb and fingers. Press into a 9" or 13" removable bottom tart pan. Line the bottom with the thinly sliced mango and freeze.

For filling:
Place the mango in first, then all the ingredients except the coconut oil. Blend until smooth and creamy, using the coconut water if needed to blend. You are looking for a think and smooth pudding. Add the coconut oil and just blend enough to mix. Pour filling over the mango bottom in the tart pan, and refreeze at least 4 hours. Slice while frozen and serve slightly defrosted. ( about 15 -20 minutes )

Irish Moss gel:
Soak 1/2 cup dry irish moss in water for 4 hours. Rinse very well until all sand, seaweed or fishing line is gone. Place in blender with water just about to cover. Blend until it is a smooth gel. DO NOT over blend. Add more water if needed to blend. You should have a thick but smooth gel. It will keep 10 days in the refrigerator. You can also freeze it for 3 months.

Vegan Peanut Butter Ice Cream

 Hi Everyone:

This recipe is a real winner if you like peanut butter, butter pecan or chocolate peanut butter ice cream. This is the first raw vegan recipe I have used where the texture is just like commercial ice cream! Koodos to Robyn from Green Smoothie Girl where the recipe was adopted. This ice cream is delicious, healthy and easy to make. All you need is a blender, ice cube trays and a freezer. Here's how it goes....

1 1/2 cups almond or cashew milk
5 medjool dates, pitted & soaked
3 TBS agave or maple syrup
4 TBS peanut butter
2 TBS almond butter
1 young coconut, meat only
1/4 tsp vanilla powder
dash salt

Blend everything until smooth. It should be fairly thick, but not too thick to pour. Adjust flavor and sweetness, then pour into ice cube trays and freeze. Just before serving blend or pulse ice cubes enough to soften. Serve immediately with chocolate shavings, raw chocolate sauce and your favorite chopped nut. My favorite are pecans.
Variation: add 2 TBS cacao powder to blender with 2 extra TBS agave or maple syrup to make a chocolate peanut butter batter.

Chocolate Strawberry Delight


Hello all you wonderful people:

Just wanted to share this easy and delicious raw food dessert recipe with you before the end of the season. This is one of my favorite quick desserts. It is so yummy and healthy too. Definitely a recipe to make for a cooked food crowd. I hope you enjoy it as much as I do.


Chocolate Strawberry Delight
Makes 4-6 servings


Strawberry Cream

1 lb fresh strawberries
3/4 cup cashews, soaked
1/3 cup water
2 TBS agave syrup
Blend cashews with the 1/3 cup of water or enough to just cover. Measure out 3/4 cup of the cream and set the rest aside. Add 1 cup of diced strawberries and the agave then blend until smooth. It should make about 2 cups. Reserve 1/2 cup. Thin slice the rest of the strawberries and fold into the cream.

Chocolate Sauce

10 TBS cacao butter, melted
6 TBS cacao powder
5 TBS agave syrup
dash vanilla powder
pinch salt
Whisk together and adjust for flavor.

Crumble

1/2 cup raw almonds
1/2 cup raw pecans
10 deglet dates, pitted
1 TBS cacao butter, melted
2 TBS cacao powder
2 1/2 TBS coconut palm sugar
1/8 tsp vanilla powder
pinch salt
Place all ingredients except the cacao butter in a food processor and process until finely ground. Adjust sweetness and then add the cacao butter and process just enough to combine.

Assembly:
Make the crumble first. Take a glass 7 X 9" pan, press the crumble firmly into the bottom and freeze for 15 minutes. Make the chocolate sauce and pour just enough on top to coat the crumble and place back in the freezer for at least 15 minutes while you make the strawberry cream. Spread the 1/2 cup strawberry cream on the chocolate then spoon the strawberry mixture on top. Drizzle some of the chocolate sauce on the strawberries. Serve at room temperature with a sliced fresh strawberry fan for garnish. Use any remaining chocolate sauce or strawberry cream for candies or milkshakes.

I just wanted to give you a little rundown of what was coming up in the next few weeks.
The first thing is my raw soup class with Kim & Sean Smith from Pure Health Foods. The class is this Monday, August 16, 2010, 5:30pm. If you would like to attend you must sign up and pay on or  before Saturday, August 14, 2010.  There will be a couple other goodies there along with the spicy vegetable, sweet pea and watermelon mango soups we are making. Coming the end of August is a fabulous energy healing class with my friend Vickie Smith. She will be teaching Healing Touch level 2. Before I go, here's a quick, but very tasty sweet corn chip recipe. ( These are like candy treats to me. I could eat them all day long, I love them so much!)

SWEET CORN CHIPS

1 bag, 16oz frozen organic corn
1 red bell pepper, chopped
1/2 cup chia seeds, ground ( measure then grind )
1/2 water to soak chia in
1/2 cup ground almonds, soaked, then ground
3/4 cup ground cashews, dry
3 TBS nutritional yeast ( optional )
3 TBS flax seeds, ground
salt to taste
cayenne pepper or other hot pepper to taste
1/2 cup water if needed to process

Soak the chia seeds in 1/2 cup filtered water until they gel. Add the red pepper, corn, chia gel, almonds, cashews, flax, salt and yeast to the processor. Process until smooth and combined thoroughly. Use the other 1/2 cup water if needed to process.  The mixture will be thick, but spreadable. Spread on a teflex sheet about 1/4 inch thick. Use a knife or pizza cutter to score it for your crackers. Place in dehydrator for 5 hours at 115 degrees. Then flip onto another dehydrator sheet and peel off the teflex. Dry another 5 hours until crispy. Store in an airtight glass container.

Summer Recipes


Hello:

It is very hot again in Las Vegas, so I thought I would share a few recipes with you today. One of them is for a morning wake up "cappuccino like" drink. You can make it either hot or cold.  It is guaranteed to brighten your morning and provide you with some healthy get up and go!! I hope you enjoy these recipes. Use your creativity to customize them to your tastes. Have a fun and healthy July!


Cappuccino Tea
Makes 2 cups

2 cups hot or cold tea ( honey bush, rooibos, pau d' arco, gynostemma )
1 TBS protein powder ( whey or hemp )
dash cinnamon and ginger
1/4 cup almond or rice milk
1 tsp coconut oil
2 tsp mesquite powder
1 tsp maca powder
1 tsp chaga mushroom powder
2 tsp cacao powder
1 tsp vanilla powder or extract
1 TBS agave or coconut sugar or your favorite sweetener

Blend until frothy if warm. Blend with and pour over ice if cold.



Indian Cabbage Salad
By: Pure Health Foods

2 cups thinly shredded organic cabbage
2 cups shredded organic carrots
1/2 cup crushed roasted organic peanuts (or substitute favorite raw nuts if you're a 100% raw foodist)
1/4 cup organic peanut oil (coconut oil is great, too!)
1 hot organic green chili chopped
1/2 cup chopped organic cilantro
1/2 tsp raw, organic honey
Organic Lemon juice and RealSalt ™
to taste

Mix everything except salt and lemon - add them only when ready to eat.


Watermelon Berry Fizz
makes 4 glasses

2 cups watermelon, diced
1 white peach or nectarine, diced
4 large strawberries or raspberries
1 tsp fresh lime juice
1 bottle sparkling water, I use Voss in the glass bottle

Blend watermelon, strawberries and the nectarine. Strain through fine strainer or nut milk bag and add the lime juice. In a 14 oz glass add about 1/4 cup of the fruit puree and 1/3 cup of the sparkling water, stir to mix. Add ice, garnish with a fresh strawberry or lime wheel.

Strawberry Cooler



Hello Everyone:

It's hot here in Las Vegas, so I made this delightful organic  strawberry cooler tonight. It is really a wonderful and refreshing treat after a long hot day. Here's how it goes.

Strawberry Lime Cooler
makes 2 cups

1 large fuji or granny smith apple
1/2 cup water
1 large lime, juiced
2 tsp agave
6 fresh organic strawberries, plus 2 for garnish
1/4" piece of fresh ginger ( optional )

Blend the water and apple, then strain or put through a nut milk bag. Return to blender and add the rest of the ingredients. Blend until smooth. Pour over ice, garnish with a fresh strawberry or lime wheel. Enjoy!

Can it be, Vegan Tuna??

Hello everyone:

Is it possible to have vegan tuna? In these times with all the toxins, mercury, PCB's and now tons of oil in the ocean, eating real tuna  might not be the best idea. This is a favorite recipe of mine when I am craving a tuna like pate. It also makes some great bite size snacks that pack a nutritional punch.

One of the nutrients that you will receive from this recipe is iodine. Iodine is greatly needed by the body to regulate your thyroid, energy, heart rate, calcium levels, immune response and metabolism. If you are having issues with your weight or hot/cold temperature, check your iodine level, you may be low. Iodine is also a wonderful chelator for mercury, lead, aluminum, and cadmium. So let's make a delicious raw vegan dish and fill up on our iodine and minerals!

Raw Vegan Tuna Pate

1/4 cup organic raw almonds, soaked overnight ( measure, then soak )
3/4 cup organic raw sunflower seeds, soaked and sprouted
2 TBS raw organic hemp seeds ( optional, adds protein and creamy texture )
1/4 cup diced organic tomatoes
1 cup organic zucchini, diced ( about 1 medium zucchini )
1 stalk organic celery, diced
1/4 cup organic red bell pepper
2 tsp organic fresh lemon juice
1 TBS olive oil or oil from sun dried tomatoes
4 -6 organic sun dried tomatoes, either rehydrated or in oil
1 tsp kelp powder ( optional, gives more tuna flavor )
dash sea salt to taste
4-6 raw nori sheets, cut into 1" by 2" pieces

In a food processor combine everything except the nori sheets. Process until smooth. Adjust the flavor. It is ready to be eaten as a pate on crackers, tomato rounds, cucumber slices, zucchini rounds or in collard green wraps. What is left spoon onto the nori pieces and dehydrate at 110 degrees until dry and crispy, about 8 hours.

In case you are not aware:

In 2007 the USDA passed a law that ALL almonds must be pasteurized, except if they are sold directly from the farm. Now, all the RAW almonds you see in the stores like Whole Foods, etc are PASTEURIZED, they are just not roasted and thus labeled raw. To buy really raw ( ones that will sprout ) almonds visit Organic Pastures, where they grow the organic almonds and ship to you from the farm.

Summertime Refreshing & Cleansing Green Juice

What a wonderful day! I am getting ready for a 7 day liver and gallbladder flush. I  haven't done one in a few years now, so this should be really good!! Maybe a I'll get a record 2000 stones out. I find that it is easier and healthier for your body if you eat as alkaline and raw as possible or juice at least 1 week prior to your flush. Here is a tasty, easy juice that refreshes you, alkalizes you and flushes the kidneys, all at the same time. It various versions have become my daily summer juice for 2010. It goes like this...makes 1, 14 ounce serving.

4 stalks celery
1/2 large cucumber, sliced lengthwise
1/2 grapefruit peeled ( leave on as much of the white membrane as possible )
1 hand full parsley ( 8 - 10 sprigs )
2 kale leaves
1-2 cups watermelon diced
watermelon rinds sliced ( from the 1-2 cups )
slice of fresh ginger ( optional )

Juice the celery, cucumber, watermelon rinds and parsley. In a blender blend into juice the diced watermelon and grapefruit halve. Combine the two, stir and enjoy immediately!
If you do not have a juicer but have either a Vita Mix or a K-Tech blender, you can just blend the entire recipe and strain or use one of Elaina's nut milk bags if you want a thinner juice. Enjoy the juice and the summer. A toast to alkalizing for HEALTH, Cheers!

Coconut Macaroons


Hello Everyone:

It has been a fun several days. My friend Robert and I went on another Perfect Vacation. If you have never tried one, you are missing out. The ultimate beauty of these; they are ALWAYS interesting, fun and PERFECT! What more could you ask for?

I have been creatively playing in the kitchen again and made an easy coconut macaroon last night. You can eat this one as is, frozen or dehydrated. I have dehydrated several overnight and am now going to cover them in raw cacao! This is a very easy recipe and one the children can be involved in too!


Coconut Macaroons
makes about 25

                             2 cups almond meal / pulp from making almond milk
                             1 1/2 TBS chia seeds, ground ( measure, then grind )
                             6 TBS water for chia seeds
                             5 TBS creamed honey, agave or half of each mixed
                             1 cup coconut, shredded
                             1 tsp vanilla powder or extract
                             1/2 tsp coconut flavoring ( optional )
                             2 TBS coconut oil
                             dash salt
In a small bowl place the ground chia seeds, add 6 tablespoons water and mix throughly. Using a larger bowl, add the almond pulp, shredded coconut, salt, vanilla, coconut oil and flavoring, and mix. Then add the thickened chia seeds and honey. Stir until completely combined. Adjust flavor and sweetness. Spoon or scoop onto a dehydrator teflex sheet or parchment paper and form small cookies. Dehydrate at 105 degrees for 6-8 hours.

*** You can split the recipe, add 2 TBS cacao powder plus 1-2 TBS honey or agave and make chocolate coconut macaroons. If you make a full recipe you can substitute cacao butter for the coconut oil and add 4 or 5 TBS cacao powder to create a richer chocolate flavor.
Another variation is to add 1 TBS of maca powder or 2 TBS mesquite powder to either the vanilla or chocolate cookies.

World Ocean Day

 Hi Everyone:

Today is World Ocean Day, and boy we sure can use it now. As the days roll by and the oil keeps pouring into the Gulf waters by the millions of gallons,( currently 25,490,800 gallons) I am happy that at least for today there is light shining on this very precious resource. Chevy and Jayni Chase, Ted Danson, Roz Savage, Brian Skerry, Sylvia Earle along with many others are speaking out to help bring awareness to our valuable water resource, the oceans. Thank you one and all for your dedication and exhausting efforts. Do you realize that 70-90% of the oxygen we breath comes form the Marine Phytoplankton in the oceans? If they die from pollution, over acid conditions or other factors, we may die also from oxygen depravation. This is now becoming a very realistic outcome, and one which I'm sure no one truly wants to manifest. Much has changed in our oceans in just 50 short years, what will happen in the next 25 years? Are the planetary oceans reflecting the personal toxicity within the mass human population? When will it be time for a juice fast and cleanse, both for humanity and our planet?

To help save the oceans and all the beautiful living species in them I believe conscious awareness and daily choice are greatly needed. You first must become aware, and then make deliberate daily choices that are for the highest good of the ALL. This is being responsible and living in harmony with the larger whole, humanity, our planet and later the universe and other planets. What steps can someone take to get started living more aware and conscious?

What you can do NOW...
  • Seek out information, get educated, as you do you will connect to more people that are doing the same
  • sign petitions - sign one now to STOP oil drilling NOW GO HERE TO SIGN NOW
  • start a daily practice of good deeds in your own daily life
  • ask when you make decisions, " is this for the highest good of myself and the ALL"
  • choose organic foods that help sustain the planet and future generations instead of pollute 
  • share the information you receive with others to help enlighten them and bring awareness into their life
  • recycle, compost if you can
  • start communities or groups to share resources
  • choose to eat Organic vegetarian or vegan foods and NOT seafoods
  • grow your own food and share with others
  • pray for the oceans in what ever way works for you
  • choose paper or bring your own cloth bags when you shop
  • stop using plastic in your life and wearing synthetic clothing as much as possible
  • use your money and choices as your VOTE, if you don't support companies by buying their products, they will have to stop making them. When enough of us stop buying the toxic products they will go away or be transformed into healthy choices for everyone
  • join groups that help educate and raise awareness like Oceana or Mission Blue

Be sure to share this with all your friends and family to get them going too. Everyone must help to reverse the toxicity of this beautiful planet before it is too late.

Do you REALLY know what is in your FOOD?

Does everyone know what GMO ( Genetically Modified Organisms ) are and the effects they have on humans, and the environment? Do you know how to tell what foods are GMO or have GMO ingredients in them? Are you aware what effects GMO foods are having on the environment and the children? Please take time and watch this interesting and informative video to learn a wealth of information about Genetically Modified Organisms.

I was shocked, and frankly scared, when I heard some of the statics Jeffrey Smith presents in this lecture. Now I know the REAL truth about GMO. One of the ways for the US to have GMO banned from our food and our soil is to NOT BUY products that use them. I have made a pact with myself to NEVER buy GMO again, and I hope you will do the same. By choosing to support organic products you will be insuring your health and the health of our planet and children.

My next step is to grow some or all of my own food. You can do this inside using hydroponics or have the good old outdoor family garden. Either way you will be insuring healthy, fresh food for yourself and family. It is a wonderful learning tool for children, as well as an activity to involve the entire family. There are some great creative indoor gardening ideas happening right now. I love the one where you raise fish in the bottom and grow the food on top of the water. It reminds me of the beta bowls, where the beta fish are swimming and plants are growing in the same water, only lots bigger!
